- Red lentils - 100 grams
- Brown rice - 50 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 1 liter
- Olive oil - 2 tablespoons
- Tomato paste - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the red lentils and brown rice under cold water and set aside.
- In a large pot, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-5 minutes.
- Add the diced carrot and tomato to the pot, stirring well. Cook for another 5 minutes until the vegetables soften.
- Stir in the tomato paste, cumin, paprika, salt, and black pepper, and cook for 2 more minutes to combine the flavors.
- Add the rinsed lentils and brown rice to the pot, then pour in the vegetable broth. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for 25-30 minutes until the lentils and rice are tender.
- Once cooked, taste and adjust seasoning if necessary. If desired, use an immersion blender to blend the soup slightly for a creamier texture.
- Serve hot, garnished with chopped fresh parsley.
