Ingredients
- Ground lamb - 250 grams
- Ground beef - 250 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 500 ml
- Chickpeas - 100 grams, cooked
- Carrot - 1 medium, diced
- Tomato - 1 medium, diced
- Lemon - 1, juiced
- Pita bread - 2 pieces, for serving
Steps
- In a mixing bowl, combine the ground lamb, ground beef, finely chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix well and form into 4 patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced carrot and tomato for about 3-4 minutes until softened.
- Pour in the vegetable broth and bring to a simmer. Add the cooked chickpeas and simmer for an additional 10 minutes.
- Stir in the lemon juice for a fresh twist, and season with additional salt and pepper if needed.
- To serve, place a köfte patty inside a pita bread and ladle some of the broth with vegetables and chickpeas over it. Enjoy warm.
