Ingredients

  • Ground lamb or beef - 300 grams
  • Onion - 1 small, finely grated
  • Garlic - 2 cloves, minced
  • Parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Zucchini - 1 medium, sliced into rounds
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Greek yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Mint - 1 tablespoon, chopped

Steps

  1. In a large bowl, combine the ground meat, grated onion, minced garlic, chopped parsley, cumin, paprika, black pepper, and salt. Mix well until all ingredients are evenly incorporated.
  2. Shape the mixture into oval patties (köfte) about 2 cm thick.
  3. Preheat a grill or grill pan over medium-high heat and brush with olive oil.
  4. Grill the köfte for about 4-5 minutes on each side, or until cooked through and nicely charred.
  5. While the köfte is grilling, prepare the vegetables by slicing the zucchini, tomato, and cucumber.
  6. In a small bowl, mix the Greek yogurt with lemon juice and chopped mint to create a refreshing sauce.
  7. Serve the köfte on a plate with grilled zucchini, sliced tomato, cucumber, and a dollop of yogurt sauce on the side.
