- Ground lamb or beef - 300 grams
- Onion - 1 small, finely grated
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Zucchini - 1 medium, sliced into rounds
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
- Greek yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Mint - 1 tablespoon, chopped
Steps
- In a large bowl, combine the ground meat, grated onion, minced garlic, chopped parsley, cumin, paprika, black pepper, and salt. Mix well until all ingredients are evenly incorporated.
- Shape the mixture into oval patties (köfte) about 2 cm thick.
- Preheat a grill or grill pan over medium-high heat and brush with olive oil.
- Grill the köfte for about 4-5 minutes on each side, or until cooked through and nicely charred.
- While the köfte is grilling, prepare the vegetables by slicing the zucchini, tomato, and cucumber.
- In a small bowl, mix the Greek yogurt with lemon juice and chopped mint to create a refreshing sauce.
- Serve the köfte on a plate with grilled zucchini, sliced tomato, cucumber, and a dollop of yogurt sauce on the side.
