Ingredients

  • Ground beef (lean) - 250 grams
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Parsley (chopped) - 2 tablespoons
  • Cumin (ground) - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Whole wheat lavash bread - 2 pieces
  • Tomato (sliced) - 1 medium
  • Cucumber (sliced) - 1 medium
  • Lettuce leaves - 4
  • Yogurt (low-fat) - 4 tablespoons
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine the ground beef, chopped onion, minced garlic, parsley, cumin, paprika, black pepper, and salt. Mix well until all ingredients are evenly incorporated.
  2. Shape the mixture into small oval patties (about 4-5 cm long).
  3. Heat a non-stick skillet over medium heat and add the olive oil. Once hot, add the köfte patties and cook for about 5-6 minutes on each side, or until browned and cooked through.
  4. While the köfte is cooking, prepare the yogurt sauce by mixing the low-fat yogurt with lemon juice and a pinch of salt in a small bowl.
  5. Once the köfte is cooked, remove them from the skillet and let them rest for a minute.
  6. To assemble the köfte dürüm, lay a piece of lavash bread flat. Place 2-3 köfte patties in the center, followed by a few slices of tomato, cucumber, and lettuce leaves.
  7. Drizzle the yogurt sauce over the top, then wrap the lavash tightly around the filling, folding in the sides to secure it.
  8. Repeat the process with the second lavash bread and serve immediately.
