- Ground beef (lean) - 250 grams
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Parsley (chopped) - 2 tablespoons
- Cumin (ground) - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Whole wheat lavash bread - 2 pieces
- Tomato (sliced) - 1 medium
- Cucumber (sliced) - 1 medium
- Lettuce leaves - 4
- Yogurt (low-fat) - 4 tablespoons
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
Steps
- In a mixing bowl, combine the ground beef, chopped onion, minced garlic, parsley, cumin, paprika, black pepper, and salt. Mix well until all ingredients are evenly incorporated.
- Shape the mixture into small oval patties (about 4-5 cm long).
- Heat a non-stick skillet over medium heat and add the olive oil. Once hot, add the köfte patties and cook for about 5-6 minutes on each side, or until browned and cooked through.
- While the köfte is cooking, prepare the yogurt sauce by mixing the low-fat yogurt with lemon juice and a pinch of salt in a small bowl.
- Once the köfte is cooked, remove them from the skillet and let them rest for a minute.
- To assemble the köfte dürüm, lay a piece of lavash bread flat. Place 2-3 köfte patties in the center, followed by a few slices of tomato, cucumber, and lettuce leaves.
- Drizzle the yogurt sauce over the top, then wrap the lavash tightly around the filling, folding in the sides to secure it.
- Repeat the process with the second lavash bread and serve immediately.
