Ingredients

  • Red lentils - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Breadcrumbs - 50 grams
  • Egg - 1 large
  • Burger buns - 2 pieces
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2 medium, sliced
  • Yogurt - 100 grams
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the red lentils under cold water and then cook them in a pot with 400ml of water for about 15-20 minutes until soft. Drain any excess water and let cool slightly.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 5 minutes.
  3. In a large bowl, combine the cooked lentils, sautéed onion and garlic, grated carrot, chopped parsley, cumin, paprika, salt, black pepper, and breadcrumbs. Mix well.
  4. Add the egg to the mixture and combine until fully incorporated. Form the mixture into two patties.
  5. In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the lentil patties for about 4-5 minutes on each side until golden brown.
  6. While the patties are cooking, prepare the yogurt sauce by mixing the yogurt and lemon juice in a small bowl. Add salt to taste if desired.
  7. To assemble the burgers, place a lettuce leaf on each burger bun, add the lentil patty, top with sliced tomato and cucumber, and drizzle with the yogurt sauce. Close the bun and serve immediately.
