Köfte Burger

Ingredients
- Red lentils - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Fresh parsley - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Breadcrumbs - 50 grams
- Egg - 1 large
- Burger buns - 2 pieces
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Cucumber - 1/2 medium, sliced
- Yogurt - 100 grams
- Lemon juice - 1 tablespoon
Steps
- Rinse the red lentils under cold water and then cook them in a pot with 400ml of water for about 15-20 minutes until soft. Drain any excess water and let cool slightly.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 5 minutes.
- In a large bowl, combine the cooked lentils, sautéed onion and garlic, grated carrot, chopped parsley, cumin, paprika, salt, black pepper, and breadcrumbs. Mix well.
- Add the egg to the mixture and combine until fully incorporated. Form the mixture into two patties.
- In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the lentil patties for about 4-5 minutes on each side until golden brown.
- While the patties are cooking, prepare the yogurt sauce by mixing the yogurt and lemon juice in a small bowl. Add salt to taste if desired.
- To assemble the burgers, place a lettuce leaf on each burger bun, add the lentil patty, top with sliced tomato and cucumber, and drizzle with the yogurt sauce. Close the bun and serve immediately.
