Ingredients

  • Chicken breast - 300 grams
  • Red bell pepper - 1 medium, cut into chunks
  • Zucchini - 1 medium, sliced
  • Red onion - 1 medium, cut into chunks
  • Cherry tomatoes - 200 grams
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper to create a marinade.
  2. Cut the chicken breast into bite-sized cubes and add them to the marinade, ensuring they are well coated. Allow to marinate for at least 20 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated chicken, red bell pepper, zucchini, red onion, and cherry tomatoes onto skewers, alternating between ingredients.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Once done, remove the skewers from the grill and let them rest for 5 minutes.
  7. Sprinkle chopped fresh parsley over the skewers before serving.
