- Chicken breast - 300 grams
- Red bell pepper - 1 medium, cut into chunks
- Zucchini - 1 medium, sliced
- Red onion - 1 medium, cut into chunks
- Cherry tomatoes - 200 grams
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 3 cloves, minced
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper to create a marinade.
- Cut the chicken breast into bite-sized cubes and add them to the marinade, ensuring they are well coated. Allow to marinate for at least 20 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated chicken, red bell pepper, zucchini, red onion, and cherry tomatoes onto skewers, alternating between ingredients.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Once done, remove the skewers from the grill and let them rest for 5 minutes.
- Sprinkle chopped fresh parsley over the skewers before serving.
