  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Fresh spinach - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Red pepper flakes - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, mix warm water, yeast, and a pinch of sugar. Let it sit for about 5 minutes until frothy.
  2. In a separate bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover it, and let it rise in a warm place for 30 minutes.
  4. Meanwhile, heat a pan over medium heat and add a splash of olive oil. Sauté the chopped onion and minced garlic until translucent.
  5. Add the spinach to the pan and cook until wilted. Stir in the diced tomato, red pepper flakes, black pepper, and parsley. Cook for an additional 2-3 minutes. Remove from heat and add lemon juice.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and divide it into two equal pieces. Roll out each piece into an oval shape, about 1/2 cm thick.
  8. Place the rolled-out dough on a baking sheet lined with parchment paper. Spoon the spinach mixture onto the center of each oval, leaving a border around the edges.
  9. Fold the edges of the dough over the filling to create a boat shape. Bake in the preheated oven for 15-20 minutes or until the crust is golden brown.
  10. Remove from the oven, allow to cool slightly, then slice and serve warm.
