Ingredients
- Phyllo dough - 6 sheets
- Fresh spinach - 300 grams
- Feta cheese - 100 grams, crumbled
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1, beaten (for egg wash)
- Sesame seeds - 1 tablespoon (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt and black pepper.
- Remove from heat and let the mixture cool slightly, then stir in the crumbled feta cheese.
- Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and repeat until you have 3 layers.
- Spoon a portion of the spinach and feta mixture along one edge of the phyllo. Roll it tightly into a log shape.
- Place the rolled börek on a baking sheet lined with parchment paper. Brush the top with the beaten egg and sprinkle with sesame seeds if desired.
- Repeat the process with the remaining phyllo sheets and filling.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crisp.
- Allow to cool slightly before slicing and serving.
