Ingredients

  • Phyllo dough - 6 sheets
  • Fresh spinach - 300 grams
  • Feta cheese - 100 grams, crumbled
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten (for egg wash)
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt and black pepper.
  4. Remove from heat and let the mixture cool slightly, then stir in the crumbled feta cheese.
  5. Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and repeat until you have 3 layers.
  6. Spoon a portion of the spinach and feta mixture along one edge of the phyllo. Roll it tightly into a log shape.
  7. Place the rolled börek on a baking sheet lined with parchment paper. Brush the top with the beaten egg and sprinkle with sesame seeds if desired.
  8. Repeat the process with the remaining phyllo sheets and filling.
  9. Bake in the preheated oven for 25-30 minutes, or until golden brown and crisp.
  10. Allow to cool slightly before slicing and serving.
