Ingredients

  • Lamb or beef, thinly sliced - 300 grams
  • Cauliflower, grated - 200 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Tomato paste - 2 tablespoons
  • Crushed tomatoes - 200 grams
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Plain Greek yogurt - 100 grams
  • Fresh parsley, chopped - for garnish

Steps

  1. Preheat the oven to 200°C (392°F).
  2. In a bowl, combine grated cauliflower, almond flour, egg, salt, and pepper to form a dough.
  3. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a flatbread shape, and bake for 15-20 minutes until golden.
  4. In a skillet, heat olive oil over medium heat and add minced garlic, sautéing until fragrant.
  5. Add the sliced lamb or beef to the skillet, seasoning with salt, black pepper, and ground cumin. Cook until browned and cooked through, about 8-10 minutes.
  6. In a separate saucepan, combine tomato paste and crushed tomatoes, simmering for 5-7 minutes until slightly thickened. Season with salt and pepper.
  7. Once the cauliflower flatbread is done, slice it into pieces and arrange on plates.
  8. Top the flatbread with the cooked meat, drizzle with tomato sauce, and add a dollop of Greek yogurt.
  9. Garnish with fresh parsley and serve immediately.
