Ingredients
- All-purpose flour - 100 grams
- Unsalted butter - 50 grams (cold, diced)
- Powdered sugar - 30 grams
- Egg yolk - 1 large
- Cold water - 2 tablespoons
- Milk - 200 ml
- Sugar - 30 grams
- Vanilla extract - 1 teaspoon
- Cornstarch - 15 grams
- Strawberries - 150 grams (sliced)
- Gelatin powder - 5 grams
- Water - 2 tablespoons (for gelatin)
Steps
- In a mixing bowl, combine the all-purpose flour and powdered sugar. Add the cold diced butter and mix until it resembles coarse crumbs.
- Add the egg yolk and cold water, then knead the dough gently until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 180°C (350°F). Roll out the chilled dough and fit it into a tart pan. Prick the bottom with a fork and bake for 15-20 minutes or until golden.
- In a saucepan, heat the milk and sugar over medium heat until warm. In a separate bowl, mix cornstarch with a little cold milk to dissolve it.
- Once the milk is warm, add the cornstarch mixture and stir continuously until it thickens. Remove from heat and stir in the vanilla extract.
- Pour the pastry cream into the cooled tart shell and smooth the top. Let it cool to room temperature.
- To prepare the gelatin, dissolve it in 2 tablespoons of water and let it sit for 5 minutes. Then, gently heat it until melted.
- Arrange the sliced strawberries on top of the pastry cream and brush with the melted gelatin for a glossy finish.
- Chill the tart in the refrigerator for at least 15 minutes before serving.
