Ingredients

  • All-purpose flour - 100 grams
  • Unsalted butter - 50 grams (cold, diced)
  • Powdered sugar - 30 grams
  • Egg yolk - 1 large
  • Cold water - 2 tablespoons
  • Milk - 200 ml
  • Sugar - 30 grams
  • Vanilla extract - 1 teaspoon
  • Cornstarch - 15 grams
  • Strawberries - 150 grams (sliced)
  • Gelatin powder - 5 grams
  • Water - 2 tablespoons (for gelatin)

Steps

  1. In a mixing bowl, combine the all-purpose flour and powdered sugar. Add the cold diced butter and mix until it resembles coarse crumbs.
  2. Add the egg yolk and cold water, then knead the dough gently until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. Preheat the oven to 180°C (350°F). Roll out the chilled dough and fit it into a tart pan. Prick the bottom with a fork and bake for 15-20 minutes or until golden.
  4. In a saucepan, heat the milk and sugar over medium heat until warm. In a separate bowl, mix cornstarch with a little cold milk to dissolve it.
  5. Once the milk is warm, add the cornstarch mixture and stir continuously until it thickens. Remove from heat and stir in the vanilla extract.
  6. Pour the pastry cream into the cooled tart shell and smooth the top. Let it cool to room temperature.
  7. To prepare the gelatin, dissolve it in 2 tablespoons of water and let it sit for 5 minutes. Then, gently heat it until melted.
  8. Arrange the sliced strawberries on top of the pastry cream and brush with the melted gelatin for a glossy finish.
  9. Chill the tart in the refrigerator for at least 15 minutes before serving.
