Ingredients

  • Firm Tofu - 400 grams
  • Red Bell Pepper - 1 medium, cut into 2cm cubes
  • Zucchini - 1 medium, cut into 2cm slices
  • Cherry Tomatoes - 10
  • Olive Oil - 3 tablespoons
  • Lemon Juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. Press the tofu for about 15 minutes to remove excess moisture, then cut it into 2cm cubes.
  2. In a bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, oregano, salt, and black pepper to create the marinade.
  3. Add the tofu cubes to the marinade, ensuring they are well-coated. Let it marinate for at least 15 minutes.
  4. Meanwhile, prepare the vegetables by cutting the red bell pepper and zucchini into suitable sizes for skewering.
  5. After marinating, thread the tofu, red bell pepper, zucchini, and cherry tomatoes onto the skewers, alternating between tofu and vegetables.
  6. Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill.
  7. Grill the skewers for about 10-12 minutes, turning occasionally until the tofu is golden and the vegetables are tender.
  8. Remove from the grill and serve hot with a side of vegan yogurt or a fresh salad.
