- Firm Tofu - 400 grams
- Red Bell Pepper - 1 medium, cut into 2cm cubes
- Zucchini - 1 medium, cut into 2cm slices
- Cherry Tomatoes - 10
- Olive Oil - 3 tablespoons
- Lemon Juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black Pepper - 1/2 teaspoon
- Skewers - 4 (if wooden, soaked in water for 30 minutes)
Steps
- Press the tofu for about 15 minutes to remove excess moisture, then cut it into 2cm cubes.
- In a bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, oregano, salt, and black pepper to create the marinade.
- Add the tofu cubes to the marinade, ensuring they are well-coated. Let it marinate for at least 15 minutes.
- Meanwhile, prepare the vegetables by cutting the red bell pepper and zucchini into suitable sizes for skewering.
- After marinating, thread the tofu, red bell pepper, zucchini, and cherry tomatoes onto the skewers, alternating between tofu and vegetables.
- Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill.
- Grill the skewers for about 10-12 minutes, turning occasionally until the tofu is golden and the vegetables are tender.
- Remove from the grill and serve hot with a side of vegan yogurt or a fresh salad.
