- Red onion - 100 grams
- Mushrooms (button or cremini) - 150 grams
- Cherry tomatoes - 150 grams
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic (minced) - 2 cloves
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
- Skewers (wooden or metal) - 4 pieces
Steps
- Preheat your grill or grill pan over medium-high heat.
- In a large bowl, combine the olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper to create the marinade.
- Chop the bell peppers, zucchini, red onion, and mushrooms into bite-sized pieces.
- Add the vegetables and cherry tomatoes to the marinade, and toss until they are well coated. Allow to marinate for at least 15 minutes.
- While the vegetables are marinating, soak wooden skewers in water for 10 minutes to prevent burning, if using wooden skewers.
- Thread the marinated vegetables onto the skewers, alternating between different types of vegetables.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the vegetables are tender and have grill marks.
- Remove from the grill and sprinkle with chopped fresh parsley before serving.
