  • Bell peppers (red, yellow, green) - 200 grams
  • Zucchini - 150 grams
  • Red onion - 100 grams
  • Mushrooms (button or cremini) - 150 grams
  • Cherry tomatoes - 150 grams
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Skewers (wooden or metal) - 4 pieces

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a large bowl, combine the olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper to create the marinade.
  3. Chop the bell peppers, zucchini, red onion, and mushrooms into bite-sized pieces.
  4. Add the vegetables and cherry tomatoes to the marinade, and toss until they are well coated. Allow to marinate for at least 15 minutes.
  5. While the vegetables are marinating, soak wooden skewers in water for 10 minutes to prevent burning, if using wooden skewers.
  6. Thread the marinated vegetables onto the skewers, alternating between different types of vegetables.
  7. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the vegetables are tender and have grill marks.
  8. Remove from the grill and sprinkle with chopped fresh parsley before serving.
