- Zucchini - 1 medium, sliced into rounds
- Red bell pepper - 1 medium, cut into squares
- Yellow bell pepper - 1 medium, cut into squares
- Red onion - 1 medium, cut into wedges
- Mushrooms - 200 grams, whole or halved
- Halloumi cheese - 200 grams, cut into cubes
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create a marinade.
- Add the sliced zucchini, bell peppers, onion wedges, mushrooms, and halloumi cubes to the marinade and toss well to coat everything evenly.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 15 minutes.
- Preheat a grill pan or outdoor grill over medium-high heat.
- Thread the marinated vegetables and halloumi onto the skewers, alternating between the different ingredients.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and have grill marks.
- Remove from the grill and serve hot, garnished with fresh parsley if desired.
