Ingredients

  • Zucchini - 1 medium, sliced into rounds
  • Red bell pepper - 1 medium, cut into squares
  • Yellow bell pepper - 1 medium, cut into squares
  • Red onion - 1 medium, cut into wedges
  • Mushrooms - 200 grams, whole or halved
  • Halloumi cheese - 200 grams, cut into cubes
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create a marinade.
  2. Add the sliced zucchini, bell peppers, onion wedges, mushrooms, and halloumi cubes to the marinade and toss well to coat everything evenly.
  3. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 15 minutes.
  4. Preheat a grill pan or outdoor grill over medium-high heat.
  5. Thread the marinated vegetables and halloumi onto the skewers, alternating between the different ingredients.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and have grill marks.
  7. Remove from the grill and serve hot, garnished with fresh parsley if desired.
