Ingredients

  • Carrots - 300 grams, grated
  • Tahini - 3 tablespoons

  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 2 tablespoons

Steps

  1. Wash and peel the carrots, then grate them using a box grater or food processor.
  2. In a mixing bowl, combine the grated carrots, minced garlic, tahini, lemon juice, olive oil, salt, black pepper, and water.
  3. Mix all the ingredients thoroughly until well combined and creamy. If the mixture is too thick, add a little more water to reach the desired consistency.
  4. Taste and adjust seasoning if necessary, adding more salt or lemon juice as desired.
  5. Transfer the mixture to a serving bowl, and garnish with chopped fresh parsley on top.
