Ingredients

  • 2 medium carrots - 250 grams
  • 1 cup plain yogurt - 240 grams
  • 1 clove garlic - minced
  • 2 tablespoons olive oil - 30 ml
  • 1 tablespoon lemon juice - 15 ml
  • Salt - to taste
  • Black pepper - to taste
  • Chopped fresh parsley - for garnish

Steps

  1. Peel and grate the carrots using a box grater or a food processor.
  2. In a skillet, heat the olive oil over medium heat. Add the grated carrots and sauté for about 5 minutes until they soften slightly.
  3. Remove the skillet from heat and let the carrots cool for a few minutes.
  4. In a mixing bowl, combine the plain yogurt, minced garlic, lemon juice, salt, and black pepper. Mix well until smooth.
  5. Add the sautéed carrots to the yogurt mixture and stir until well combined.
  6. Transfer the Havuç Tarator to a serving dish and garnish with chopped fresh parsley.
  7. Serve chilled or at room temperature with bread or as a side dish.
