- 2 medium carrots - 250 grams
- 1 cup plain yogurt - 240 grams
- 1 clove garlic - minced
- 2 tablespoons olive oil - 30 ml
- 1 tablespoon lemon juice - 15 ml
- Salt - to taste
- Black pepper - to taste
- Chopped fresh parsley - for garnish
Steps
- Peel and grate the carrots using a box grater or a food processor.
- In a skillet, heat the olive oil over medium heat. Add the grated carrots and sauté for about 5 minutes until they soften slightly.
- Remove the skillet from heat and let the carrots cool for a few minutes.
- In a mixing bowl, combine the plain yogurt, minced garlic, lemon juice, salt, and black pepper. Mix well until smooth.
- Add the sautéed carrots to the yogurt mixture and stir until well combined.
- Transfer the Havuç Tarator to a serving dish and garnish with chopped fresh parsley.
- Serve chilled or at room temperature with bread or as a side dish.
