Ingredients

  • Basmati rice - 150 grams
  • Carrots - 2 medium, grated

  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 milliliters
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for about 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the grated carrots and cook for another 5 minutes, stirring occasionally, until they soften.
  4. Add the soaked rice to the saucepan, along with the vegetable broth, salt, black pepper, cinnamon, and thyme. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and has absorbed all the liquid.
  6. Once cooked, remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
  7. Garnish with fresh parsley and serve warm.
