- Basmati rice - 150 grams
- Carrots - 2 medium, grated

- Vegetable broth - 300 milliliters
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cinnamon - 1/4 teaspoon
- Dried thyme - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for about 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the grated carrots and cook for another 5 minutes, stirring occasionally, until they soften.
- Add the soaked rice to the saucepan, along with the vegetable broth, salt, black pepper, cinnamon, and thyme. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and has absorbed all the liquid.
- Once cooked, remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve warm.
