Steps
- Clean the anchovies by removing the heads and guts, then rinse them under cold water and pat dry with paper towels.
- In a shallow dish, mix the all-purpose flour, cornmeal, salt, black pepper, and paprika.
- Dredge the cleaned anchovies in the flour mixture, ensuring they are well coated.
- Heat the olive oil in a large frying pan over medium heat.
- Once the oil is hot, add the coated anchovies in a single layer and fry for about 2-3 minutes on each side until golden brown and crispy.
- Remove the fried anchovies from the pan and place them on a paper towel-lined plate to absorb excess oil.
- Serve hot, garnished with fresh parsley and lemon wedges on the side.
