  • Fresh anchovies - 400 grams
  • All-purpose flour - 100 grams
  • Cornmeal - 50 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Olive oil - 4 tablespoons
  • Lemon wedges - 2 for serving
  • Fresh parsley - a handful, chopped

Steps

  1. Clean the anchovies by removing the heads and guts, then rinse them under cold water and pat dry with paper towels.
  2. In a shallow dish, mix the all-purpose flour, cornmeal, salt, black pepper, and paprika.
  3. Dredge the cleaned anchovies in the flour mixture, ensuring they are well coated.
  4. Heat the olive oil in a large frying pan over medium heat.
  5. Once the oil is hot, add the coated anchovies in a single layer and fry for about 2-3 minutes on each side until golden brown and crispy.
  6. Remove the fried anchovies from the pan and place them on a paper towel-lined plate to absorb excess oil.
  7. Serve hot, garnished with fresh parsley and lemon wedges on the side.
