  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Wooden skewers - 4, soaked in water for 30 minutes

Steps

  1. In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper to create a marinade.
  2. Add the sliced zucchini, red and yellow bell peppers, red onion wedges, and cherry tomatoes to the marinade. Toss to coat the vegetables evenly.
  3. Cover the bowl and let the vegetables marinate for at least 15 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated vegetables onto the soaked wooden skewers, alternating the types of vegetables for a colorful presentation.
