Ingredients
- Gluten-free pasta - 150 grams
- Artichokes - 4 medium-sized, cleaned and quartered
- Olive oil - 4 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Lemon juice - 2 tablespoons
- Fresh dill - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Water - 500 milliliters
Steps
- In a large pot, bring 500 ml of water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large pan, heat 4 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced carrot to the pan, cooking for an additional 2-3 minutes until fragrant.
- Stir in the quartered artichokes and cook for 5 minutes, allowing them to soften slightly.
- Add the lemon juice, fresh dill, salt, and black pepper to the pan. Pour in enough water to cover the artichokes, then bring to a gentle simmer.
- Cover the pan and let it cook for about 10-15 minutes, until the artichokes are tender.
- Once cooked, combine the pasta with the artichoke mixture and toss gently to incorporate all the flavors. Adjust seasoning if necessary.
- Serve warm, drizzled with a little extra olive oil and garnished with more fresh dill if desired.
