Ingredients

  • Gluten-free pasta - 150 grams
  • Artichokes - 4 medium-sized, cleaned and quartered
  • Olive oil - 4 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Lemon juice - 2 tablespoons
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Water - 500 milliliters

Steps

  1. In a large pot, bring 500 ml of water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat 4 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced carrot to the pan, cooking for an additional 2-3 minutes until fragrant.
  4. Stir in the quartered artichokes and cook for 5 minutes, allowing them to soften slightly.
  5. Add the lemon juice, fresh dill, salt, and black pepper to the pan. Pour in enough water to cover the artichokes, then bring to a gentle simmer.
  6. Cover the pan and let it cook for about 10-15 minutes, until the artichokes are tender.
  7. Once cooked, combine the pasta with the artichoke mixture and toss gently to incorporate all the flavors. Adjust seasoning if necessary.
  8. Serve warm, drizzled with a little extra olive oil and garnished with more fresh dill if desired.
