Ingredients

  • Gluten-Free All-Purpose Flour - 200 grams
  • Water - 100 ml
  • Egg - 1 large
  • Ground Lamb or Beef - 150 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Yogurt - 200 grams
  • Olive Oil - 1 tablespoon
  • Mint - 1 teaspoon, dried
  • Red Pepper Flakes - 1/2 teaspoon (optional)

Steps

  1. In a large bowl, combine the gluten-free flour, water, and egg. Mix until a dough forms, then knead for about 5 minutes until smooth. Cover and let it rest for 30 minutes.
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened, about 5 minutes.
  3. Add the ground lamb or beef to the skillet, followed by salt, black pepper, paprika, and cook until browned, around 5-7 minutes. Remove from heat and let the filling cool slightly.
  4. Roll out the rested dough on a floured surface to about 2-3 mm thickness. Cut into 5 cm squares.
  5. Place a small spoonful of the meat mixture in the center of each square. Fold the corners to meet in the center and pinch to seal the dumplings.
  6. Bring a large pot of salted water to a boil. Cook the manti in batches for about 8-10 minutes, or until they float to the surface.
  7. While the manti are cooking, prepare the yogurt sauce by mixing yogurt, dried mint, and a pinch of salt in a bowl.
  8. Once cooked, drain the manti and serve hot, drizzled with the yogurt sauce and sprinkled with red pepper flakes if desired.
