Ingredients

  • Gluten-free all-purpose flour - 200 grams
  • Egg - 1 large
  • Water - 60 milliliters
  • Salt - 1/2 teaspoon
  • Ground beef or lamb - 150 grams
  • Onion (finely chopped) - 1 small
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/4 teaspoon
  • Plain yogurt - 150 grams
  • Garlic (minced) - 1 clove
  • Olive oil - 2 tablespoons
  • Red pepper flakes - 1/2 teaspoon
  • Fresh mint (chopped) - 1 tablespoon

Steps

  1. In a mixing bowl, combine the gluten-free flour, egg, water, and salt. Knead until a smooth dough forms, then cover and let it rest for 15 minutes.
  2. In another bowl, mix the ground meat, chopped onion, black pepper, and paprika until well combined.
  3. Roll out the rested dough on a lightly floured surface until it's about 2-3 mm thick. Cut the dough into small squares (about 5 cm each).
  4. Place a small spoonful of the meat mixture in the center of each square. Fold the dough over to form a triangle, sealing the edges tightly.
  5. Bring a large pot of salted water to a boil. Drop the mantı into the boiling water and cook for about 10-12 minutes, or until they float to the surface and are cooked through.
  6. While the mantı cooks, prepare the yogurt sauce by mixing the yogurt and minced garlic in a bowl. Set aside.
  7. In a small pan, heat the olive oil and add the red pepper flakes. Cook for 1-2 minutes until fragrant.
  8. Once the mantı is cooked, drain them and serve on a plate. Top with the yogurt sauce and drizzle the spiced oil over them. Garnish with chopped fresh mint.
