Ingredients
- Gluten-free all-purpose flour - 200 grams
- Egg - 1 large
- Water - 60 milliliters
- Salt - 1/2 teaspoon
- Ground beef or lamb - 150 grams
- Onion (finely chopped) - 1 small
- Black pepper - 1/4 teaspoon
- Paprika - 1/4 teaspoon
- Plain yogurt - 150 grams
- Garlic (minced) - 1 clove
- Olive oil - 2 tablespoons
- Red pepper flakes - 1/2 teaspoon
- Fresh mint (chopped) - 1 tablespoon
Steps
- In a mixing bowl, combine the gluten-free flour, egg, water, and salt. Knead until a smooth dough forms, then cover and let it rest for 15 minutes.
- In another bowl, mix the ground meat, chopped onion, black pepper, and paprika until well combined.
- Roll out the rested dough on a lightly floured surface until it's about 2-3 mm thick. Cut the dough into small squares (about 5 cm each).
- Place a small spoonful of the meat mixture in the center of each square. Fold the dough over to form a triangle, sealing the edges tightly.
- Bring a large pot of salted water to a boil. Drop the mantı into the boiling water and cook for about 10-12 minutes, or until they float to the surface and are cooked through.
- While the mantı cooks, prepare the yogurt sauce by mixing the yogurt and minced garlic in a bowl. Set aside.
- In a small pan, heat the olive oil and add the red pepper flakes. Cook for 1-2 minutes until fragrant.
- Once the mantı is cooked, drain them and serve on a plate. Top with the yogurt sauce and drizzle the spiced oil over them. Garnish with chopped fresh mint.
