Ingredients

  • Lamb shoulder - 250 grams, cut into chunks
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Red bell pepper - 1, chopped
  • Carrot - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Chicken or beef broth - 400 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the lamb chunks to the pot, seasoning them with salt, black pepper, paprika, and cumin. Brown the lamb on all sides, around 5-7 minutes.
  4. Stir in the diced tomato, chopped red bell pepper, and diced carrot. Cook for another 5 minutes until the vegetables start to soften.
  5. Pour in the chicken or beef broth and bring the mixture to a boil. Reduce heat to low, cover, and let it simmer for about 30 minutes until the lamb is tender.
  6. While the lamb is cooking, prepare the gluten-free pasta according to package instructions. Drain and set aside.
  7. Once the lamb is tender, serve it over the cooked gluten-free pasta. Garnish with fresh parsley before serving.
