- Gluten-free pasta - 200 grams
- Lamb shoulder - 250 grams, cut into chunks
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Red bell pepper - 1, chopped
- Carrot - 1 medium, diced
- Olive oil - 2 tablespoons
- Chicken or beef broth - 400 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Add the lamb chunks to the pot, seasoning them with salt, black pepper, paprika, and cumin. Brown the lamb on all sides, around 5-7 minutes.
- Stir in the diced tomato, chopped red bell pepper, and diced carrot. Cook for another 5 minutes until the vegetables start to soften.
- Pour in the chicken or beef broth and bring the mixture to a boil. Reduce heat to low, cover, and let it simmer for about 30 minutes until the lamb is tender.
- While the lamb is cooking, prepare the gluten-free pasta according to package instructions. Drain and set aside.
- Once the lamb is tender, serve it over the cooked gluten-free pasta. Garnish with fresh parsley before serving.
