Ingredients

  • Medium-sized sweet potatoes - 2
  • Olive oil - 2 tablespoons
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Butter - 1 tablespoon
  • Greek yogurt - 100 grams
  • Kalamata olives - 50 grams, chopped
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1/2, diced
  • Red onion - 1/4, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and pierce the sweet potatoes several times with a fork. Place them on a baking sheet and bake for 30-35 minutes or until tender.
  3. In a small bowl, mix the olive oil, sea salt, black pepper, garlic powder, and paprika.
  4. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh into a bowl, leaving a small border.
  5. Add the butter and Greek yogurt to the potato flesh in the bowl. Mash until creamy and well combined.
  6. Refill the sweet potato skins with the creamy mixture. Top each potato with chopped olives, halved cherry tomatoes, diced cucumber, finely chopped red onion, and crumbled feta cheese.
  7. Return the stuffed sweet potatoes to the oven and bake for an additional 10 minutes until heated through.
  8. Remove from the oven, sprinkle with fresh parsley, and serve warm.
