Ingredients
- Cauliflower - 300 grams, riced
- Tomato - 1 medium, finely chopped
- Cucumber - 1 medium, diced
- Red bell pepper - 1, finely chopped
- Green onion - 2 stalks, sliced
- Fresh parsley - 1/4 cup, finely chopped
- Fresh mint - 1/4 cup, finely chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Pomegranate molasses - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cumin - 1/2 teaspoon
Steps
- Begin by ricing the cauliflower: Cut the cauliflower into florets and pulse in a food processor until fine and resembling rice grains.
- In a large skillet, sauté the riced cauliflower over medium heat for about 5-7 minutes until slightly tender but still firm. Remove from heat and let cool.
- While the cauliflower is cooling, prepare the vegetables: chop the tomato, cucumber, red bell pepper, green onion, parsley, and mint.
- In a large mixing bowl, combine the cooled cauliflower rice with the chopped vegetables and herbs.
- In a small bowl, whisk together the olive oil, lemon juice, pomegranate molasses, salt, black pepper, and cumin to create the dressing.
- Pour the dressing over the cauliflower mixture and gently toss until everything is well combined.
- Let the kısır sit for about 10 minutes to allow the flavors to meld before serving.
