Ingredients

  • Cauliflower - 300 grams, riced
  • Tomato - 1 medium, finely chopped
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1, finely chopped
  • Green onion - 2 stalks, sliced
  • Fresh parsley - 1/4 cup, finely chopped
  • Fresh mint - 1/4 cup, finely chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Pomegranate molasses - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cumin - 1/2 teaspoon

Steps

  1. Begin by ricing the cauliflower: Cut the cauliflower into florets and pulse in a food processor until fine and resembling rice grains.
  2. In a large skillet, sauté the riced cauliflower over medium heat for about 5-7 minutes until slightly tender but still firm. Remove from heat and let cool.
  3. While the cauliflower is cooling, prepare the vegetables: chop the tomato, cucumber, red bell pepper, green onion, parsley, and mint.
  4. In a large mixing bowl, combine the cooled cauliflower rice with the chopped vegetables and herbs.
  5. In a small bowl, whisk together the olive oil, lemon juice, pomegranate molasses, salt, black pepper, and cumin to create the dressing.
  6. Pour the dressing over the cauliflower mixture and gently toss until everything is well combined.
  7. Let the kısır sit for about 10 minutes to allow the flavors to meld before serving.
