Ingredients

  • Gluten-free all-purpose flour - 200 grams
  • Warm water - 120 ml
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Feta cheese - 100 grams, crumbled
  • Spinach - 100 grams, fresh or frozen, chopped
  • Black pepper - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (optional, for garnish)

Steps

  1. In a mixing bowl, combine the gluten-free flour and salt. Gradually add warm water and olive oil, mixing until a dough forms.
  2. Knead the dough briefly on a floured surface until smooth. Cover with a damp cloth and let it rest for 10 minutes.
  3. In a separate bowl, mix the crumbled feta cheese, chopped spinach, and black pepper until well combined.
  4. Divide the rested dough into two equal portions. Roll each portion into a thin circle (about 25 cm in diameter) on a lightly floured surface.
  5. Place half of the filling mixture on one half of each dough circle, leaving a small border. Fold the other half over the filling and press the edges to seal.
  6. Preheat a non-stick skillet over medium heat. Cook each gözleme for about 3-4 minutes on each side until golden brown and crispy.
  7. If desired, sprinkle sesame seeds on top while cooking for added flavor. Remove from heat and let cool slightly before serving.
