Ingredients
- Gluten-free pasta - 150 grams
- Grape leaves - 10 large leaves, jarred or fresh
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground lamb or beef - 150 grams
- Rice - 50 grams, rinsed
- Tomato paste - 1 tablespoon
- Dried mint - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Vegetable or chicken broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Cook the gluten-free pasta according to package instructions until al dente, then drain and set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the ground lamb or beef to the skillet and cook until browned. Stir in the rinsed rice, tomato paste, dried mint, salt, and black pepper, mixing well.
- Pour in the broth and bring the mixture to a simmer. Cover and cook for about 15 minutes until the rice is tender and the liquid is absorbed. Stir in lemon juice and remove from heat.
- While the filling is cooling, prepare the grape leaves. If using jarred leaves, rinse them under cold water to remove excess salt.
- Lay a grape leaf flat, stem end towards you. Place about a tablespoon of the filling at the base of the leaf, fold in the sides, and roll tightly from the base to the tip. Repeat with remaining leaves and filling.
- In a large pot, arrange the stuffed dolmas seam-side down. Pour remaining broth over them and drizzle with a little olive oil. Cover with a lid and simmer on low heat for 20 minutes.
- Serve warm, garnished with fresh parsley.
