Ingredients

  • Gluten-free pasta - 150 grams
  • Grape leaves - 10 large leaves, jarred or fresh
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground lamb or beef - 150 grams
  • Rice - 50 grams, rinsed
  • Tomato paste - 1 tablespoon
  • Dried mint - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Vegetable or chicken broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Cook the gluten-free pasta according to package instructions until al dente, then drain and set aside.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Add the ground lamb or beef to the skillet and cook until browned. Stir in the rinsed rice, tomato paste, dried mint, salt, and black pepper, mixing well.
  4. Pour in the broth and bring the mixture to a simmer. Cover and cook for about 15 minutes until the rice is tender and the liquid is absorbed. Stir in lemon juice and remove from heat.
  5. While the filling is cooling, prepare the grape leaves. If using jarred leaves, rinse them under cold water to remove excess salt.
  6. Lay a grape leaf flat, stem end towards you. Place about a tablespoon of the filling at the base of the leaf, fold in the sides, and roll tightly from the base to the tip. Repeat with remaining leaves and filling.
  7. In a large pot, arrange the stuffed dolmas seam-side down. Pour remaining broth over them and drizzle with a little olive oil. Cover with a lid and simmer on low heat for 20 minutes.
  8. Serve warm, garnished with fresh parsley.
