Ingredients

  • Gluten-free all-purpose flour - 150 grams
  • Warm water - 75 ml
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Feta cheese - 100 grams, crumbled
  • Spinach - 100 grams, chopped
  • Egg - 1, beaten
  • Black pepper - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (for topping)

Steps

  1. In a mixing bowl, combine the gluten-free flour and salt. Gradually add warm water and olive oil, mixing until a dough forms.
  2. Knead the dough for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
  3. In a separate bowl, mix the crumbled feta cheese, chopped spinach, beaten egg, and black pepper until well combined.
  4. Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
  5. Divide the rested dough into two equal portions. Roll out each portion into a thin sheet on a lightly floured surface.
  6. Place a portion of the filling on one side of the dough, then fold the dough over to create a half-moon shape. Press the edges to seal.
  7. Repeat with the second portion of dough and filling.
  8. Brush the tops of the böreks with olive oil and sprinkle sesame seeds over them.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown.
  10. Remove from the oven and let cool slightly before serving.
