Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 ml
  • Olive oil - 2 tablespoons
  • Potatoes - 300 grams
  • Onion - 1 small, finely chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine 200 grams of all-purpose flour and 1 teaspoon of salt. Gradually add 100 ml of water and 2 tablespoons of olive oil, mixing until a dough forms. Knead the dough for about 5-7 minutes until smooth. Cover the dough with a damp cloth and let it rest for 30 minutes.
  2. While the dough is resting, peel and chop 300 grams of potatoes into small cubes. Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash them in a bowl.
  3. In a skillet, heat a little olive oil over medium heat. Add 1 small finely chopped onion and sauté until softened, about 5 minutes. Stir the sautéed onion into the mashed potatoes along with 1/2 teaspoon of black pepper, 1/2 teaspoon of paprika, and 2 tablespoons of chopped fresh parsley. Mix well and set aside to cool.
  4. Divide the rested dough into two equal pieces. Roll out each piece on a floured surface into a thin circle, about 25 cm in diameter.
  5. Place half of the potato filling on one half of each dough circle, leaving a border around the edges. Fold the other half of the dough over the filling to create a semi-circle and press the edges to seal tightly.
  6. Preheat the oven to 200°C (400°F). Place the gözleme on a baking sheet lined with parchment paper and brush the tops lightly with olive oil.
  7. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy. Remove from the oven and let cool slightly before slicing and serving.
