Ingredients

  • Dried fava beans - 100 grams
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 50 grams, finely chopped
  • Cucumber - 100 grams, diced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the dried fava beans under cold water and soak them in water for at least 8 hours or overnight.
  2. Drain the soaked fava beans and place them in a pot with fresh water. Bring to a boil, then reduce the heat and simmer for about 30-40 minutes until the beans are tender.
  3. Once cooked, drain the fava beans and allow them to cool slightly.
  4. In a large bowl, combine the cooked fava beans, chopped parsley, mint, halved cherry tomatoes, diced cucumber, and finely chopped red onion.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper to create the dressing.
  6. Pour the dressing over the salad and gently toss to combine all ingredients evenly.
  7. Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
