Ingredients

  • Dried fava beans - 200 grams
  • Garlic - 1 clove
  • Lemon juice - 2 tablespoons
  • Tahini - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Fresh dill - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 500 milliliters

Steps

  1. Soak the dried fava beans in water for about 8 hours or overnight.
  2. Drain the soaked fava beans and rinse them under cold water.
  3. In a pot, combine the fava beans and 500 milliliters of water. Bring to a boil, then reduce the heat and simmer for about 30-40 minutes until the beans are tender.
  4. Once cooked, drain the beans and let them cool slightly.
  5. In a food processor, combine the cooked fava beans, garlic, lemon juice, tahini, olive oil, dill, salt, and black pepper.
  6. Blend until smooth and creamy, adding a little water if necessary to reach your desired consistency.
  7. Taste and adjust seasoning if necessary.
  8. Transfer the dip to a serving bowl and drizzle with additional olive oil and garnish with dill if desired.
