Ingredients

  • Dried fava beans - 200 grams
  • Water - 500 ml (for soaking) + 250 ml (for cooking)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 2 tablespoons, chopped (optional)

Steps

  1. Rinse the dried fava beans under cold water and soak them in 500 ml of water for at least 8 hours or overnight.
  2. After soaking, drain the beans and place them in a pot with 250 ml of fresh water. Bring to a boil over medium heat.
  3. Reduce the heat and simmer for about 30 minutes, or until the beans are soft and tender.
  4. Once cooked, drain any excess water and transfer the beans to a mixing bowl.
  5. Add minced garlic, olive oil, lemon juice, salt, black pepper, and paprika to the bowl. Mash the mixture with a fork or potato masher until you achieve a creamy consistency.
  6. Taste and adjust seasoning if necessary.
  7. Serve the fava warm, drizzled with additional olive oil and garnished with chopped parsley and dill.
