Fava is a traditional Turkish dish made from fava beans, perfect for a wholesome vegan breakfast. Creamy and flavorful, it's often served with a drizzle of olive oil and fresh herbs for a delightful start to the day.

Ingredients
- Dried fava beans - 200 grams
- Water - 500 ml (for soaking) + 250 ml (for cooking)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 2 tablespoons, chopped (optional)
Steps
- Rinse the dried fava beans under cold water and soak them in 500 ml of water for at least 8 hours or overnight.
- After soaking, drain the beans and place them in a pot with 250 ml of fresh water. Bring to a boil over medium heat.
- Reduce the heat and simmer for about 30 minutes, or until the beans are soft and tender.
- Once cooked, drain any excess water and transfer the beans to a mixing bowl.
- Add minced garlic, olive oil, lemon juice, salt, black pepper, and paprika to the bowl. Mash the mixture with a fork or potato masher until you achieve a creamy consistency.
- Taste and adjust seasoning if necessary.
- Serve the fava warm, drizzled with additional olive oil and garnished with chopped parsley and dill.
