- Romaine lettuce - 100g, chopped
- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Radishes - 4, thinly sliced
- Green bell pepper - 1, diced
- Red onion - 50g, thinly sliced
- Pita bread - 1 large, cut into triangles
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Sumac - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 200°C (400°F).
- Cut the pita bread into triangles and arrange them on a baking sheet.
- Drizzle the pita triangles with 1 tablespoon of olive oil, and season with salt and pepper.
- Bake in the preheated oven for about 5-7 minutes, or until golden and crispy.
- While the pita is baking, prepare the salad by combining the chopped romaine lettuce, diced cucumber, diced tomato, sliced radishes, diced green bell pepper, and sliced red onion in a large bowl.
- In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, sumac, salt, and black pepper.
- Pour the dressing over the salad and toss well to combine.
- Once the pita bread is done baking, let it cool slightly before adding it to the salad.
- Garnish with chopped fresh parsley and serve immediately.
