Ingredients

  • Romaine lettuce - 100g, chopped
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Radishes - 4, thinly sliced
  • Green bell pepper - 1, diced
  • Red onion - 50g, thinly sliced
  • Pita bread - 1 large, cut into triangles
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the pita bread into triangles and arrange them on a baking sheet.
  3. Drizzle the pita triangles with 1 tablespoon of olive oil, and season with salt and pepper.
  4. Bake in the preheated oven for about 5-7 minutes, or until golden and crispy.
  5. While the pita is baking, prepare the salad by combining the chopped romaine lettuce, diced cucumber, diced tomato, sliced radishes, diced green bell pepper, and sliced red onion in a large bowl.
  6. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, sumac, salt, and black pepper.
  7. Pour the dressing over the salad and toss well to combine.
  8. Once the pita bread is done baking, let it cool slightly before adding it to the salad.
  9. Garnish with chopped fresh parsley and serve immediately.
