Ingredients

  • Red onion - 1 small (about 50 grams)
  • Parsley - 30 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic - 1 clove

Steps

  1. Wash and trim the green beans, then blanch them in boiling water for about 5 minutes until tender but still crisp. Drain and immediately transfer to an ice bath to stop the cooking process.
  2. While the green beans are cooling, chop the cherry tomatoes in half, dice the cucumber, and finely chop the red onion and parsley.
  3. In a large mixing bowl, combine the cooled green beans, cherry tomatoes, cucumber, red onion, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.
