  • Tomatoes - 2 medium, chopped
  • Carrot - 1 medium, diced
  • Vegetable broth - 200 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Sugar - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the diced carrot and cook for another 5 minutes, stirring occasionally.
  5. Add the chopped tomatoes, salt, black pepper, and sugar, and cook for 5 minutes until the tomatoes soften.
  6. Add the trimmed green beans and vegetable broth. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 20 minutes until the green beans are tender.
  8. Stir in the lemon juice and chopped parsley before serving.
