- Carrot - 1 medium, diced
- Vegetable broth - 200 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Sugar - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat the olive oil in a medium saucepan over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the diced carrot and cook for another 5 minutes, stirring occasionally.
- Add the chopped tomatoes, salt, black pepper, and sugar, and cook for 5 minutes until the tomatoes soften.
- Add the trimmed green beans and vegetable broth. Bring to a boil, then reduce heat to low.
- Cover and simmer for 20 minutes until the green beans are tender.
- Stir in the lemon juice and chopped parsley before serving.
