Ingredients
- Dried white beans - 100 grams
- Water - 1 liter
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Soak the dried white beans in water overnight or for at least 8 hours. Drain and rinse before using.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the diced carrot and potato to the pot, and cook for another 5 minutes, stirring occasionally.
- Stir in the minced garlic, tomato paste, paprika, and cumin, and cook for 2 more minutes to release the flavors.
- Add the soaked beans and water to the pot. Bring to a boil, then reduce heat to low and cover. Simmer for about 30-40 minutes or until the beans are tender.
- Once cooked, season the soup with salt and black pepper. If desired, use an immersion blender to blend a portion of the soup for a creamier texture.
- Stir in the lemon juice just before serving, and garnish with fresh parsley.
