Ingredients

  • Dried white beans - 100 grams
  • Water - 1 liter
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Soak the dried white beans in water overnight or for at least 8 hours. Drain and rinse before using.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the diced carrot and potato to the pot, and cook for another 5 minutes, stirring occasionally.
  4. Stir in the minced garlic, tomato paste, paprika, and cumin, and cook for 2 more minutes to release the flavors.
  5. Add the soaked beans and water to the pot. Bring to a boil, then reduce heat to low and cover. Simmer for about 30-40 minutes or until the beans are tender.
  6. Once cooked, season the soup with salt and black pepper. If desired, use an immersion blender to blend a portion of the soup for a creamier texture.
  7. Stir in the lemon juice just before serving, and garnish with fresh parsley.
