Ingredients

  • Chickpeas - 200 grams (soaked overnight)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Baking powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • All-purpose flour - 2 tablespoons
  • Olive oil - for frying
  • Pide bread or flatbread - 2 pieces
  • Tomato - 1, sliced
  • Cucumber - 1, sliced
  • Lettuce - a handful, shredded
  • Tahini sauce - for drizzling

Steps

  1. Drain and rinse the soaked chickpeas, then place them in a food processor along with the onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, black pepper, and flour.
  2. Blend the mixture until it reaches a coarse, dough-like consistency, ensuring not to over-blend.
  3. Shape the mixture into small patties, about 5 cm in diameter.
  4. Heat olive oil in a frying pan over medium heat and fry the patties for 4-5 minutes on each side or until golden brown and crispy.
  5. While the falafel is frying, warm the pide bread in a separate pan or in the oven for a few minutes.
  6. Assemble the pide by placing 2-3 falafel patties on each piece of flatbread.
  7. Top with sliced tomatoes, cucumbers, and shredded lettuce.
  8. Drizzle with tahini sauce and serve immediately.
