Ingredients

  • Chickpeas - 200 grams (soaked overnight)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Parsley - 30 grams, finely chopped
  • Cilantro - 30 grams, finely chopped
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • All-purpose flour - 2 tablespoons
  • Olive oil - for frying
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Tahini sauce - for serving

Steps

  1. Drain and rinse the soaked chickpeas, then place them in a food processor.
  2. Add the chopped onion, minced garlic, parsley, cilantro, cumin, coriander, salt, black pepper, baking powder, and flour to the food processor.
  3. Pulse until the mixture is well combined but still slightly chunky. Be careful not to over-process.
  4. Transfer the mixture to a bowl and refrigerate for about 15 minutes to firm up.
  5. Heat olive oil in a frying pan over medium heat.
  6. Form the falafel mixture into patties, about the size of your burger buns.
  7. Fry the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  8. Toast the burger buns lightly on a separate pan or in a toaster.
  9. Assemble the burgers by placing a lettuce leaf, a falafel patty, sliced tomato, and cucumber on each bun, and drizzle with tahini sauce.
  10. Serve immediately and enjoy!
