- Chickpeas - 200 grams (soaked overnight)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 30 grams, finely chopped
- Cilantro - 30 grams, finely chopped
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Baking powder - 1 teaspoon
- All-purpose flour - 2 tablespoons
- Olive oil - for frying
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
- Tahini sauce - for serving
Steps
- Drain and rinse the soaked chickpeas, then place them in a food processor.
- Add the chopped onion, minced garlic, parsley, cilantro, cumin, coriander, salt, black pepper, baking powder, and flour to the food processor.
- Pulse until the mixture is well combined but still slightly chunky. Be careful not to over-process.
- Transfer the mixture to a bowl and refrigerate for about 15 minutes to firm up.
- Heat olive oil in a frying pan over medium heat.
- Form the falafel mixture into patties, about the size of your burger buns.
- Fry the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- Toast the burger buns lightly on a separate pan or in a toaster.
- Assemble the burgers by placing a lettuce leaf, a falafel patty, sliced tomato, and cucumber on each bun, and drizzle with tahini sauce.
