Ingredients
- Long-grain rice - 150 grams
- Unsalted pistachios - 50 grams, shelled and roughly chopped
- Butter - 30 grams
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Vegetable broth - 300 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the butter and olive oil over medium heat until melted.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Drain the soaked rice and add it to the saucepan, stirring to coat the grains with the butter and oil mixture.
- Cook the rice for about 2-3 minutes, allowing it to lightly toast.
- Pour in the vegetable broth, and add salt and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes, or until all the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork, then gently fold in the chopped pistachios.
- Serve warm, garnished with fresh parsley.
