Ingredients

  • Long-grain rice - 150 grams
  • Unsalted pistachios - 50 grams, shelled and roughly chopped
  • Butter - 30 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Vegetable broth - 300 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the butter and olive oil over medium heat until melted.
  3. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  4. Drain the soaked rice and add it to the saucepan, stirring to coat the grains with the butter and oil mixture.
  5. Cook the rice for about 2-3 minutes, allowing it to lightly toast.
  6. Pour in the vegetable broth, and add salt and black pepper. Bring to a boil.
  7. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes, or until all the liquid is absorbed.
  8. Remove from heat and let it sit covered for an additional 5 minutes.
  9. Fluff the rice with a fork, then gently fold in the chopped pistachios.
  10. Serve warm, garnished with fresh parsley.
