Ingredients

  • Granulated sugar - 200 grams
  • Water - 100 ml
  • Cornstarch - 50 grams
  • Pistachios (finely chopped) - 50 grams
  • Lemon juice - 1 teaspoon
  • Powdered sugar - for dusting
  • Cornstarch - for dusting

Steps

  1. In a saucepan, combine the granulated sugar and water. Heat over medium heat until the sugar dissolves completely, then bring to a boil.
  2. In a separate bowl, mix the cornstarch with 100 ml of water to create a slurry. Gradually add this to the boiling sugar syrup while stirring continuously to avoid lumps.
  3. Add the lemon juice to the mixture and continue to cook while stirring for about 15-20 minutes, or until the mixture thickens and pulls away from the sides of the pan.
  4. Once thickened, remove the saucepan from heat and fold in the finely chopped pistachios until evenly distributed.
  5. Pour the mixture into a greased rectangular dish, smoothing the top with a spatula. Allow it to cool at room temperature for about 2 hours or until set.
  6. Once set, dust a clean surface with powdered sugar and cornstarch. Turn the lokum out onto the surface and cut it into small cubes.
  7. Dust the cut pieces with more powdered sugar and cornstarch to prevent sticking. Serve and enjoy!
