Ingredients
- Granulated sugar - 200 grams
- Water - 100 ml
- Cornstarch - 50 grams
- Pistachios (finely chopped) - 50 grams
- Lemon juice - 1 teaspoon
- Powdered sugar - for dusting
- Cornstarch - for dusting
Steps
- In a saucepan, combine the granulated sugar and water. Heat over medium heat until the sugar dissolves completely, then bring to a boil.
- In a separate bowl, mix the cornstarch with 100 ml of water to create a slurry. Gradually add this to the boiling sugar syrup while stirring continuously to avoid lumps.
- Add the lemon juice to the mixture and continue to cook while stirring for about 15-20 minutes, or until the mixture thickens and pulls away from the sides of the pan.
- Once thickened, remove the saucepan from heat and fold in the finely chopped pistachios until evenly distributed.
- Pour the mixture into a greased rectangular dish, smoothing the top with a spatula. Allow it to cool at room temperature for about 2 hours or until set.
- Once set, dust a clean surface with powdered sugar and cornstarch. Turn the lokum out onto the surface and cut it into small cubes.
- Dust the cut pieces with more powdered sugar and cornstarch to prevent sticking. Serve and enjoy!
