Ingredients

  • Heavy cream - 250 ml
  • Pistachios, shelled and chopped - 50 g
  • Honey - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. In a saucepan, pour the heavy cream and heat it over low heat. Do not bring it to a boil; keep it at a gentle simmer.
  2. Allow the cream to simmer for 25 minutes, stirring occasionally to prevent it from sticking to the bottom of the pan.
  3. Once the cream has thickened, remove it from the heat and let it cool for a few minutes.
  4. Stir in the honey, vanilla extract, and a pinch of salt until well combined.
  5. Transfer the mixture to a bowl and refrigerate for at least 2 hours until it sets to a creamy consistency.
  6. Before serving, sprinkle the chopped pistachios on top of the kaymak and drizzle with a little extra honey if desired.
