Ingredients

  • Red lentils - 100 grams
  • Pistachios (shelled) - 50 grams
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Carrot (grated) - 1 medium
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley (chopped) - 2 tablespoons
  • Bread crumbs - 50 grams
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato (sliced) - 1 medium
  • Cucumber (sliced) - 1/2 medium
  • Yogurt - 100 grams
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the red lentils under cold water, then boil them in a pot with 400 ml of water until soft, about 15 minutes. Drain and let cool.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent, about 5 minutes.
  3. In a large bowl, combine the cooked lentils, sautéed onion and garlic, grated carrot, crushed pistachios, cumin, paprika, salt, black pepper, chopped parsley, and bread crumbs. Mix well until a dough forms.
  4. Divide the mixture into two equal portions and shape them into burger patties.
  5. In the same skillet, heat the remaining tablespoon of olive oil and cook the patties for about 4-5 minutes on each side until golden brown.
  6. While the patties are cooking, prepare the yogurt sauce by mixing yogurt with lemon juice and a pinch of salt.
  7. To assemble the burgers, place a lettuce leaf on each bun, add the patty, and top with sliced tomato and cucumber. Drizzle with yogurt sauce before closing the bun.
