Ingredients
- Red lentils - 100 grams
- Pistachios (shelled) - 50 grams
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Carrot (grated) - 1 medium
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley (chopped) - 2 tablespoons
- Bread crumbs - 50 grams
- Burger buns - 2
- Lettuce leaves - 2
- Tomato (sliced) - 1 medium
- Cucumber (sliced) - 1/2 medium
- Yogurt - 100 grams
- Lemon juice - 1 tablespoon
Steps
- Rinse the red lentils under cold water, then boil them in a pot with 400 ml of water until soft, about 15 minutes. Drain and let cool.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent, about 5 minutes.
- In a large bowl, combine the cooked lentils, sautéed onion and garlic, grated carrot, crushed pistachios, cumin, paprika, salt, black pepper, chopped parsley, and bread crumbs. Mix well until a dough forms.
- Divide the mixture into two equal portions and shape them into burger patties.
- In the same skillet, heat the remaining tablespoon of olive oil and cook the patties for about 4-5 minutes on each side until golden brown.
- While the patties are cooking, prepare the yogurt sauce by mixing yogurt with lemon juice and a pinch of salt.
- To assemble the burgers, place a lettuce leaf on each bun, add the patty, and top with sliced tomato and cucumber. Drizzle with yogurt sauce before closing the bun.
