Ingredients

  • Phyllo dough - 6 sheets
  • Ground pistachios - 100 grams
  • Coconut oil - 50 grams, melted
  • Maple syrup - 100 milliliters
  • Water - 50 milliliters
  • Vanilla extract - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Lemon juice - 1 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, combine the ground pistachios, cinnamon, and half of the maple syrup. Mix well and set aside.
  3. Take one sheet of phyllo dough and brush it lightly with melted coconut oil. Layer another sheet on top and brush again. Repeat this process for three sheets.
  4. Spread half of the pistachio mixture evenly over the layered phyllo.
  5. Layer another three sheets of phyllo dough on top, brushing each with coconut oil as before.
  6. Spread the remaining pistachio mixture on top and cover with the last three sheets of phyllo, brushing each with coconut oil.
  7. Cut the baklava into diamond or square shapes using a sharp knife.
  8. Bake in the preheated oven for 25-30 minutes, or until golden brown.
  9. While the baklava is baking, prepare the syrup by combining the remaining maple syrup, water, vanilla extract, and lemon juice in a small saucepan. Bring to a gentle simmer for about 5 minutes.
  10. Once the baklava is done, pour the warm syrup evenly over the hot baklava. Allow it to absorb the syrup for at least 10 minutes before serving.
