- Cherry tomatoes - 200 grams, halved
- Bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Fresh thyme - 1 teaspoon, chopped
Steps
- Preheat your oven to 200°C (390°F).
- In a bowl, mix the olive oil, lemon juice, minced garlic, parsley, salt, black pepper, paprika, and thyme to create a marinade.
- Place the scorpion fish in a baking dish and pour the marinade over it, ensuring the fish is well-coated.
- Arrange the halved cherry tomatoes, sliced bell pepper, and zucchini around the fish in the baking dish.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the fish is cooked through and the vegetables are tender.
- Serve hot, garnished with additional fresh parsley if desired.
