Ingredients

  • Scorpion fish - 400 grams

  • Cherry tomatoes - 200 grams, halved
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Fresh thyme - 1 teaspoon, chopped

Steps

  1. Preheat your oven to 200°C (390°F).
  2. In a bowl, mix the olive oil, lemon juice, minced garlic, parsley, salt, black pepper, paprika, and thyme to create a marinade.
  3. Place the scorpion fish in a baking dish and pour the marinade over it, ensuring the fish is well-coated.
  4. Arrange the halved cherry tomatoes, sliced bell pepper, and zucchini around the fish in the baking dish.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  6. Remove the foil and bake for an additional 10 minutes, or until the fish is cooked through and the vegetables are tender.
