  • Zucchini - 200 grams
  • Bell pepper (red or yellow) - 150 grams
  • Eggplant - 150 grams
  • Carrot - 100 grams
  • Onion - 100 grams
  • Garlic - 3 cloves
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Wash and chop the zucchini, bell pepper, eggplant, carrot, and onion into bite-sized pieces.
  3. Mince the garlic cloves.
  4. In a large mixing bowl, combine the chopped vegetables, minced garlic, olive oil, dried oregano, salt, black pepper, and lemon juice. Toss until the vegetables are evenly coated.
  5. Transfer the mixture to a baking dish, spreading it out evenly.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and slightly golden.
  8. Remove from the oven and let it cool for a few minutes before serving.
