- Zucchini - 200 grams
- Bell pepper (red or yellow) - 150 grams
- Eggplant - 150 grams
- Carrot - 100 grams
- Onion - 100 grams
- Garlic - 3 cloves
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (390°F).
- Wash and chop the zucchini, bell pepper, eggplant, carrot, and onion into bite-sized pieces.
- Mince the garlic cloves.
- In a large mixing bowl, combine the chopped vegetables, minced garlic, olive oil, dried oregano, salt, black pepper, and lemon juice. Toss until the vegetables are evenly coated.
- Transfer the mixture to a baking dish, spreading it out evenly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and slightly golden.
- Remove from the oven and let it cool for a few minutes before serving.
