Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Potatoes - 300 grams, diced
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Paprika - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the diced potatoes with 2 tablespoons of olive oil, minced garlic, paprika, dried thyme, salt, and black pepper. Toss well to coat the potatoes evenly.
  3. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25 minutes.
  4. While the potatoes are baking, in another bowl, mix the shrimp with the remaining tablespoon of olive oil and lemon juice. Set aside.
  5. After 25 minutes, remove the baking sheet from the oven and stir the potatoes. Add the shrimp on top of the potatoes, then return to the oven for an additional 15 minutes, or until the shrimp are cooked through and pink.
  6. Remove from the oven, garnish with fresh parsley, and serve immediately.
