Ingredients

  • Mackerel fillets - 400 grams
  • Olive oil - 3 tablespoons
  • Lemon - 1, sliced
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 200 grams, halved
  • Red onion - 1 small, thinly sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the olive oil, minced garlic, dried thyme, salt, and black pepper.
  3. Place the mackerel fillets in a baking dish and drizzle the olive oil mixture over them, ensuring they are well coated.
  4. Arrange the lemon slices on top of the mackerel fillets.
  5. Add the cherry tomatoes and red onion around the fish in the baking dish.
  6. Sprinkle the chopped parsley over the entire dish.
  7. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
