- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 200 grams, halved
- Red onion - 1 small, thinly sliced
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, mix the olive oil, minced garlic, dried thyme, salt, and black pepper.
- Place the mackerel fillets in a baking dish and drizzle the olive oil mixture over them, ensuring they are well coated.
- Arrange the lemon slices on top of the mackerel fillets.
- Add the cherry tomatoes and red onion around the fish in the baking dish.
- Sprinkle the chopped parsley over the entire dish.
- Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
