- Zucchini - 2 medium, spiralized
- Shrimp - 200 grams, peeled and deveined
- Mussels - 150 grams, cleaned
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine spiralized zucchini, shrimp, mussels, olive oil, minced garlic, cherry tomatoes, parsley, lemon juice, salt, black pepper, and paprika. Toss until everything is well coated.
- Transfer the mixture to a baking dish, spreading it evenly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the shrimp are cooked through and the mussels have opened.
- Let it cool for a few minutes before serving, garnished with extra parsley if desired.
