Ingredients

  • Zucchini - 2 medium, spiralized
  • Shrimp - 200 grams, peeled and deveined
  • Mussels - 150 grams, cleaned
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine spiralized zucchini, shrimp, mussels, olive oil, minced garlic, cherry tomatoes, parsley, lemon juice, salt, black pepper, and paprika. Toss until everything is well coated.
  3. Transfer the mixture to a baking dish, spreading it evenly.
  4. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  5. Remove the foil and bake for an additional 10 minutes, or until the shrimp are cooked through and the mussels have opened.
  6. Let it cool for a few minutes before serving, garnished with extra parsley if desired.
