- Fresh parsley - 2 tablespoons, chopped
- Baking powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons (for drizzling)
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large bowl, combine the grated zucchini, carrot, and potato. Squeeze out excess moisture using a clean kitchen towel.
- Add the flour, egg, crumbled feta cheese, chopped dill, parsley, baking powder, salt, and black pepper to the bowl. Mix until well combined.
- Line a baking sheet with parchment paper and lightly grease it with olive oil.
- Scoop the mixture onto the prepared baking sheet, forming small patties, and flatten them slightly.
- Drizzle the tops with olive oil and bake in the preheated oven for about 25-30 minutes or until golden brown and crispy.
- Remove from the oven and drizzle with lemon juice before serving.
