  • All-purpose flour - 50 grams
  • Egg - 1 large
  • Feta cheese - 100 grams, crumbled
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Baking powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons (for drizzling)
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, combine the grated zucchini, carrot, and potato. Squeeze out excess moisture using a clean kitchen towel.
  3. Add the flour, egg, crumbled feta cheese, chopped dill, parsley, baking powder, salt, and black pepper to the bowl. Mix until well combined.
  4. Line a baking sheet with parchment paper and lightly grease it with olive oil.
  5. Scoop the mixture onto the prepared baking sheet, forming small patties, and flatten them slightly.
  6. Drizzle the tops with olive oil and bake in the preheated oven for about 25-30 minutes or until golden brown and crispy.
  7. Remove from the oven and drizzle with lemon juice before serving.
