- Garlic - 2 cloves, minced
- Cherry tomatoes - 200g, halved
- Bell pepper (red or yellow) - 1, sliced
- Zucchini - 1, sliced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
Steps
- Preheat the oven to 200°C (390°F).
- In a small bowl, mix the olive oil, lemon juice, minced garlic, salt, black pepper, and paprika.
- Place the sea bass fillets in a baking dish and brush them generously with the olive oil mixture.
- Arrange the cherry tomatoes, bell pepper, and zucchini around the fish in the baking dish.
- Drizzle any remaining olive oil mixture over the vegetables and season them with a pinch of salt and pepper.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes until the fish is cooked through and the vegetables are tender.
- Garnish with freshly chopped parsley before serving.
