Ingredients

  • Sea bass - 2 fillets (approximately 200g each)
  • Olive oil - 3 tablespoons
  • Lemon - 1, juiced
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200g, halved
  • Bell pepper (red or yellow) - 1, sliced
  • Zucchini - 1, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a small bowl, mix the olive oil, lemon juice, minced garlic, salt, black pepper, and paprika.
  3. Place the sea bass fillets in a baking dish and brush them generously with the olive oil mixture.
  4. Arrange the cherry tomatoes, bell pepper, and zucchini around the fish in the baking dish.
  5. Drizzle any remaining olive oil mixture over the vegetables and season them with a pinch of salt and pepper.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes until the fish is cooked through and the vegetables are tender.
  8. Garnish with freshly chopped parsley before serving.
