Ingredients
- Lamb shanks - 2 pieces (approximately 500g each)
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Onion - 1 medium, sliced
- Carrot - 1 medium, sliced
- Celery - 1 stalk, sliced
- Tomato paste - 2 tablespoons
- Dried thyme - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken or beef broth - 250 ml
- Red wine (optional) - 100 ml
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Preheat the oven to 160°C (320°F).
- In a large oven-safe pot, heat olive oil over medium-high heat. Add the lamb shanks and sear until browned on all sides, about 5-7 minutes. Remove and set aside.
- In the same pot, add minced garlic, sliced onion, carrot, and celery. Sauté for about 5 minutes until the vegetables start to soften.
- Stir in tomato paste, dried thyme, oregano, salt, and black pepper. Cook for another 2 minutes to combine the flavors.
- Add the lamb shanks back to the pot, pour in the broth and red wine (if using), and add lemon juice. Bring to a simmer.
- Cover the pot with a lid and transfer it to the preheated oven. Bake for 2 hours, or until the lamb is tender and falling off the bone.
- Once done, remove from the oven, and let it rest for 10 minutes before serving. Garnish with fresh parsley.
